Executive Chef: Derek Wilkins
Chef Derek Wilkins creates a culinary experience with a focus on local and sustainable high quality ingredients. Chef Derek Wilkins began his cooking career in Calgary AB, where he had the privilege to work alongside some of the most talented chefs in the area - including Chef Mike Dekker of the Rouge Restaurant where he started his career. Since the rise to the top, he has created unique menus for multiple successful restaurants, including Calgary's The Wednesday Room, and Courtenay's Gladstone Brewing.
